ABSTRACT The growth and importance of the Brazilian citrus industry in the world involves the introduction of technologies such as the use of plant growth regulators such as gibberellic acid (GA3). The effects of doses of 0, 5, 10 and 15 mg L-1 of GA3 (Pro-Gibb®) associated with the surfactant Silwett L-77® at 0.5 mL L-1 were evaluated in an experiment by spraying the plants of a ‘Natal’ orange orchard in the Northern region of the state of São Paulo, Brazil. The treatments were applied annually, for two years, when the fruits were still fully green, but before the flowering of the next crop. The results showed, at the picking period, that the treatment of ‘Natal’ sweet orange trees with gibberellic acid associated with silicone surfactant, reduced fruit abscission due to the higher force needed to detach the fruits from the plants and significantly increased the peel resistance to puncture; The maintenance of the greener color of the orange peel, evaluated using a colorimeter, make them less attractive to fruit flies and make it possible the delay on insecticides treatments for flies control. Additionally, it allows the delay on harvesting by storing the fruits on the plants, with staggered harvest beyond the normal period for the variety. It is suggested doses of 5 to 10 mg L-1 GA3 always associated to silicone surfactant (0.05% L77) to obtain the best responses in oranges of Natal cultivar. Treatments with GA3 did not affect the productivity of the ‘Natal’ sweet orange orchard, neither the maturation and nor the technological quality of the fruits.

RESUMO O crescimento e importância da citricultura brasileira no mundo passa pela introdução de tecnologias como a utilização de reguladores vegetais como o ácido giberélico (GA3). Os efeitos das doses de 0, 5, 10 e 15 mg L-1 de GA3 (Pro-Gibb®) associado ao surfactante Silwett L-77® a 0,5 mL L-1 foram avaliadas em experimento pulverizando as plantas de um pomar de laranjeira ‘Natal’ na região Norte do estado de São Paulo, Brasil. A aplicação dos tratamentos deu-se anualmente, durante dois anos, quando os frutos ainda estavam totalmente verdes, porém antes do florescimento da próxima safra. Os resultados mostraram por ocasião da colheita que o tratamento das laranjeiras ‘Natal’ com ácido giberélico associado a surfactante siliconado, diminuiu a abscisão de frutos pela maior força necessária para destacar os frutos das plantas durante a colheita e aumentou significativamente a resistência da casca à punctura. A manutenção da coloração mais esverdeada da casca dos frutos, avaliada através de colorímetro, os tornam menos atrativo às moscas das frutas e assim possibilita retardar as aplicações de inseticidas para controle das moscas. Além disso, permite retardar as colheitas armazenando os frutos nas plantas, com colheitas escalonadas para além do período normal para a variedade. Sugere-se doses de 5 a 10 mg L-1 GA3 sempre associado a surfactante siliconado (0,05% L77) para se obter as melhores respostas em laranjas da variedade Natal. Os tratamentos com GA3 não afetaram a produtividade do pomar de laranja ‘Natal’, nem a maturação e nem a qualidade tecnológica dos frutos.

ABSTRACT This study evaluated the effects of pelleted citrus pulp (PCP) added to orange peel on fermentative parameters and aerobic stability of orange peel silages. The treatments were based on different levels of PCP: 0 (control), 10% PCP, 20% PCP, and 30% PCP calculated according to the weight of orange peel (w/w), with five experimental silos per treatment stored for 60 days. Chemical composition, fermentative parameters, microbial population, and dry matter (DM) losses were performed in silages after opening the experimental silos. Furthermore, aerobic stability was evaluated for 12 days. Silages with 10 and 20% PCP presented suitable levels of DM, 226 and 302 g kg−1, respectively, and probably adequate water activity that benefited the lactic acid fermentation, but it jeopardized their aerobic stabilities. The inclusion of 10% PCP did not reduce the effluent loss compared with the control silages. Yet, 30% PCP silage showed the lowest effluent loss (93%), in contrast to the low lactic acid content (35 g kg−1) and short aerobic stability (49 h). Control silages remained stable for a longer period (115 h), but showed greater loss of N as NH3, and higher losses of DM through gas (354 g kg−1) and effluents (114 g kg−1). In short, we highlighted 20% PCP silage because of its high lactic acid bacteria (6.3 cfu g−1), high lactic acid:acetic acid ratio (1.41), low nitrogen degradation as NH3, and reduced gas (67%) and effluent (80%) productions. With the highest lactic acid (66.42 g kg−1), these well-preserved silages showed a more intense aerobic degradation, starting after 42h. The inclusion of PCP to orange peel improves the fermentation process probably due to the decrease of water activity, but decreases the aerobic stability of the silage as well.

Avaliou-se a adição de farinha de okara em produto cárneo emulsionado (salsicha tipo Frankfurter) com base nas características físicas, químicas e sensoriais do produto obtido. O okara, resíduo do processamento de 'leite' de soja, foi fornecido por duas empresas cujos sistemas de produção baseiam-se na desintegração a quente da soja com casca (empresa A) e sem casca (empresa B). O okara foi desidratado em secador flash dryer e moído na forma de farinha (>420 µm). As farinhas de okara A e B apresentaram níveis aproximados de proteína (35 e 40 g.100 g-1 b.s., respectivamente). Entretanto, a farinha de okara A apresentou maiores valores (p < 0,05) para todas as propriedades funcionais tecnológicas estudadas (capacidade de emulsificação, estabilidade da emulsão, solubilidade da proteína e capacidade de retenção de água), em comparação com a farinha de okara B. As farinhas de okara A e B foram adicionadas à formulação de salsicha substituindo 1,5% e 4% do peso de carne, respectivamente. Os resultados mostraram que as salsichas contendo farinhas de okara A e B e a salsicha padrão foram igualmente aceitas pela equipe de provadores. Além disso, não houve diferenças signficativas (p < 0,05) entre as determinações físicas (cor, textura objetiva e estabilidade da emulsão) e químicas (pH e composição centesimal) das salsichas com ou sem farinha de okara.

The addition of okara flour to an emulsified meat product (Frankfurter type sausage) was evaluated based on the physical, chemical, technological, and sensory characteristics of the final product. Okara, residue from soymilk production, was provided by two soymilk producing companies whose production systems were based on the hot disintegration of the decorticated (company B) or undecorticated (company A) soybeans. The okara was dehydrated using a flash dryer and then ground into flour (>420 µm). However, The okara flours A and B showed approximately the same amount of protein (35 and 40 g.100 g-1 dwb). However, the okara flour A presented higher values (p < 0.05) for all technological functional properties studied (emulsification capacity, emulsion stability, protein solubility, and water hold capacity) than those of okara flour B. The A and B okara flours were used in a frankfurter sausage formulation as substitution of 1.5% and 4% of meat. The results showed that the sausages containing okara flours A and B, as well as the control sausage, were accepted by the sensory panel. Moreover, there were no significant differences (p < 0.05) in the physical (color, objective texture, and emulsion stability) and chemical (pH and proximate composition) measurements of the sausages with and without the okara flour.

A Doviális é uma fruta exótica originária da África, de coloração laranja-avermelhada e elevada acidez. No Brasil, foi propagada via sementes na Estação Experimental de Citricultura de Bebedouro-SP, pela FCAV/UNESP a partir de uma planta introduzida da Flórida-USA, sendo selecionada uma planta por apresentar frutos com menor acidez. Esta planta, denominada doviális 'Romana', encontra-se em plena produção e vem sendo propagada vegetativamente. O objetivo deste trabalho foi avaliar o potencial de utilização dos frutos de dovialis para o mercado de fruta fresca ou industrial, considerando as características físicas e físico-químicas dos frutos. Este estudo preliminar é inédito, pois há poucos estudos de aproveitamento dos frutos de doviális na literatura. Os resultados mostraram que a acidez dos frutos da doviális 'Romana' (1,76 % de ácido cítrico) foi significativamente inferior aos da planta introduzida (5,5 % de ácido cítrico). Os frutos da doviális 'Romana' também apresentaram 'ratio' elevado (7,55) e coloração da polpa tendendo para o amarelo-esverdeado (a*=9,01, b*= 33,15), significativamente diferentes da polpa da planta introduzida. Em geral, não houve diferenças significativas em rendimento em polpa (79%), sólidos solúveis (12 ºBrix), diâmetros transversal (26 mm) e longitudinal (23 mm). Desta forma, podemos sugerir que os frutos da doviális 'Romana' apresentam aptidão tanto para o mercado ao natural como para a produção de doces e sucos. Já os frutos da planta introduzida, face à elevada acidez e coloração atrativa, destinam-se à produção de doces e sucos. O aspecto visual da fruta e o sabor característico da doviális 'Romana' abrem potenciais mercados para a diversificação da produção comercial na fruticultura exótica.

The Dovyalis is an exotic fruit originated in Africa, reddish-orange color and high acidity. In Brazil it was propagated through seeds in Citrus Experimental Station Bebedouro SP, from a plant introduced from Florida-USA, by FCAV/UNESP being selected a plant produced fruits with lower acidity. This plant, called dovyalis 'Romana', is in full production, and has been vegetatively propagated. The objective was to evaluate the potential use of the fruits of dovyalis for the fresh fruit market or industry, considering its physical and physical-chemical characteristics. This preliminary study is unprecedented, because there are few studies use about the uses of the dovyalis in literature. The results showed that the acidity of the fruits of dovyalis 'Romana' (1.76 % citric acid) was significantly lower than those of the introduced plants (5.5 % citric acid). The fruits of dovyalis 'Romana' also had high ratio (7.55) and the pulp color tends to yellow-green (a*= 9.01, b*= 33.15), significantly different from the pulp of the introduced plant. In general, no significant differences in pulp yield (79 %), soluble solids (12 ºBrix), transversal diameter (26 mm) and longitudinal diameter (23 mm). Thus, we suggest that the fruits of dovyalis Romana present ability to both natural market and production of sweets and juices. However, the fruits of the introduced plant, in concern of the high acidity and the attractive colour, are intended to the production of sweets and juices. The visual appearance of the fruit and flavor of the dovyalis 'Romana' open up potential markets for the diversification of commercial production of exotic fruits.

O objetivo deste projeto de pesquisa foi estudar a secagem do resíduo do leite de soja em secador pneumático flash dryer utilizando a Metodologia de Superfície de Respostas (MSR) e avaliar a qualidade do resíduo desidratado. O resíduo do leite de soja, também conhecido como okara, foi fornecido por indústria brasileira. A MSR demonstrou que, para um ciclo de 120 segundos de secagem, menores teores de umidade (y) são obtidos quando maior a taxa de recirculação (x1), independente da temperatura do ar de secagem (x2), e pode ser expressa pela equação: y = 7,072 - 7,92x1 com R² = 92,92%. É possível obter okara com 10% de umidade (b.u.) na condição x1=1,25 equivalente a RT=61% e ar de secagem na temperatura de 252 ºC a 308 ºC. O okara obtido pelo Delineamento Central Composto Rotacional (DCCR) apresentou composição centesimal semelhante ao resíduo desidratado em secador de bandejas, denominado resíduo original. Houve variação significativa (p < 0,05) na Capacidade de Emulsificação (CE), Estabilidade da Emulsão (EE) e Solubilidade da Proteína (SP) entre os okaras desidratados. Podemos concluir que a secagem do okara em flash dryer é viável tecnicamente e não alterou a composição físico-química do okara, ao contrário, promoveu efeito positivo nas propriedades funcionais tecnológicas.

The objective of this research project was to study the drying of soymilk residue in a pneumatic flash dryer, using response Surface Methodology (RSM), and to evaluate the quality of the dried residue. Soymilk residue, also known as okara, was provided by a Brazilian soymilk factory. RSM showed that for a 120 second drying cycle, the lower the residue moisture contents (y) obtained, the higher the recirculation rates (x1), regardless of the air drying temperature (x2), and it could be expressed by the equation y = 7.072 - 7.92x1, with R² = 92,92%. It is possible to obtain okara with 10% of moisture (dwb) under the condition x1=1.25, equivalent to RR = 61%, with air drying temperatures ranging from 252 °C to 308 °C. The dried okara obtained through Central Compound Rotational Design (CCRD) presented a centesimal composition similar to the okara dried in a tray dryer, known as the original okara. There were significant variations (p < 0.05) in the Emulsifying Capacity (EC), Emulsion Stability (ES) and Protein Solubility (PS) between the dehydrated residues obtained. It was concluded that the flash drying of okara is technically feasible and that the physicochemical composition of the residue was not altered; on the contrary, the process promoted a positive effect on the technological functional properties.

O objetivo deste trabalho foi testar a adição do resíduo do leite de soja, também conhecido como okara, ao biscoito moldado doce (BMD). O okara foi fornecido por duas empresas produtoras de leite de soja, cujos sistemas de produção baseiam-se na desintegração a quente da soja com casca (empresa A) ou sem casca (empresa B) e separação do leite de soja. Os okaras A e B foram desidratados em secador flash dryer e moídos na forma de farinha (< 200 mesh). As farinhas de okara apresentaram altos teores de proteínas (35 g.100 g-1 b.s.), lipídios (17 g.100 g-1 b.s.) e fibras (17 a 21 g.100 g-1 b.s.). A farinha A apresentou resultados de capacidade de retenção de água, solubilidade da proteína (SP), capacidade de emulsificação (CE), estabilidade de emulsão (EE) e teor de isoflavonas, significativamente maiores (p < 0,05) que os determinados na farinha B. As formulações do BMD, substituindo 30% (p/p) do peso da farinha de trigo, foram testadas. Os resultados das análises físicas, fraturabilidade e atividade de água do BMD com farinhas A e B não diferiram significativamente (p < 0,05) em relação ao padrão. A cor, o sabor e a qualidade global do MSB com 30% de farinha B não diferiram significativamente (p < 0,05) em comparação ao padrão, demonstrando potencial para a aplicação em produtos de confeitaria.

The objective of this research was to test the addition of soymilk residue, also known as okara, to a molded sweet biscuit (MSB). The okara was provided by two soymilk producing companies whose production systems are based on hot disintegration of decorticated (company B) or non-decorticated (company A) soybeans and separation of the soymilk. Okaras A and B were dehydrated in a flash dryer and then ground to a flour (< 200 mesh). The okara flours showed high protein (35 g.100 g-1 dwb), lipid (17 g.100 g-1 dwb), and fiber (17 to 21 g.100 g-1 dwb) contents. The water holding capacity, protein solubility, emulsifying capacity, emulsion stability and isoflavone contents found in flour A were significantly higher (p < 0.05) than in flour B. The formulation of MSB, replacing 30% (w/w) of the wheat flour with okara flour was tested. The results of the physical measurements, brittleness and water activity of the MSB with flours A and B did not differ significantly (p < 0.05) from those of the standard. The color, flavor and overall quality of the MSB with 30% of okara flour B did not differ significantly from those of the standard biscuit, demonstrating its potential for application in confectionery products.

A fruta estruturada contendo polpa concentrada de mamão (700 g/kg), sacarose (340 g/kg), alginato de sódio (7 g/kg), pectina de baixa metoxilação (7 g/kg) e glicerol (50 g/kg), cortada no formato cilindro sólido (vol. aprox. 2 cm³), desidratada (12% umidade), com cobertura de açúcar impalpável, foi utilizada no estudo de vida-de-prateleira. Foram realizadas análises físicas, químicas, sensoriais e microbiológicas no produto devidamente acondicionado em sacos de filme multilaminado, para acompanhar a evolução da perda de qualidade do produto armazenado a 0, 25 e 35 °C, durante 120 dias. Os resultados mostraram que a firmeza objetiva e as avaliações subjetivas da textura e qualidade global, foram as que melhor identificaram a queda na qualidade da fruta estruturada durante a estocagem. Na condição acelerada (35 °C), o produto foi considerado próprio para consumo até 56 dias de armazenamento, quando atingiu a nota 4,5 (não gostei/nem desgostei) da escala de qualidade global do teste sensorial. Os dados cinéticos, Ea = 19,89 kcal/mol e Q10 = 3, estabelecidos no teste acelerado, permitiram estimar o limite da vida útil em 168 dias para o produto armazenado a 25 °C. Em condições normais de armazenamento, estimam-se 154 dias de vida útil com base na equação da qualidade global dos resultados sensoriais.

The restructured fruit made with concentrated papaya pulp (700 g/kg), sugar (340 g/kg), sodium alginate (7 g/kg), low methoxy pectin (7 g/kg) and glycerol (50 g/kg), cut in a solid cylindrical form (volume approx. 2 cm³), dehydrated (12% humidity) and covered with icing sugar, was chosen for the shelf life studies. The physical, chemical, sensory and microbiological analyses were made on the product packaged in a multi layer film and stored at 0, 25 and 35 °C, for 120 days to check for quality loss. The results showed that the firmness (TA.XT2 Texturometer) and the subjective evaluations of texture and overall quality were the evaluation that best explained the quality loss of the restructured fruit during storage. Under accelerated conditions (35 °C) the product was considered adequate for consumption for up to 56 days, when it reached 4.5 (neither liked nor disliked) from the overall quality scale of the sensorial test. The kinetic values, Ea= 19,89 kcal/mol and Q10= 3, established using accelerated shelf life testing, allowed for the estimation of a shelf life of 168 days for the product at 25 °C. Under normal storage conditions, the shelf life of the product being estimated as 154 days based on the overall quality using the sensory results.

O objetivo deste trabalho foi estabelecer procedimento tecnológico para produção de fruta estruturada com elevados teores (450 a 700 g/kg) de polpas concentradas de abacaxi (39ºBrix), manga (35ºBrix) e mamão (16ºBrix), e quantidade mínima de sacarose, utilizando alginato ou pectina baixamente metoxilada. Glicose ou glicerol foi utilizado como supressor de atividade de água. Valores de firmeza de 240 g para géis de alginato e 1300 g para géis de pectina, determinados em Analisador de Textura TA.XT2, podem ser utilizados como indicadores para a estruturação, baseando-se nas propriedades de corte das frutas estruturadas. O processo de estruturação compreende a mistura sob vácuo (88 kPa) da polpa concentrada previamente aquecida a 60ºC e o hidrocolóide disperso em açúcar. Soluções de CaHPO e Glucona-Delta-Lactona foram adicionadas à mistura para favorecer a formação do gel. Os resultados mostraram a importância de elevar o pH de polpas de abacaxi e manga para 4,00 com NaOH. O alginato produziu 4 géis mais firmes e o glicerol foi o supressor de atividade de água mais eficiente. As frutas estruturadas de mamão com alginato apresentaram maior firmeza (acima de 3 kg). Os géis de abacaxi com alginato não puderam ser cortados com a faca, embora os géis de manga puderam ser cortados, eles aderiram à faca.

The objective of this research was to establish a technological procedure for the production of restructured fruits with high contents (450 to 700 g/kg) of concentrated pineapple (39ºBrix), mango (35ºBrix) and papaya (16ºBrix) pulps, and minimal amounts of sucrose using alginate or low methoxy pectin. Glycerol or glucose was used to suppress the water activity. Firmness values of 240 g for alginate gels or 1300 g for pectin gels, measured using the TA.XT2 Texture Analyser, can be used as indicators for structuring based on the cutting properties of the structured fruits. The structuring process includes the mixing under vacuum (88 kPa) of the concentrated pulp, previously heated to 60ºC, and the hydrocolloid dispersed in sugar. Solutions of CaHPO and Glucono-Delta-Lactone were added to the mixture to favor gel formation. The results show the importance of raising the pineapple 4 and mango pulp pH values to 4.00 with NaOH. Alginate produced the firmest gels and glycerol was the most efficient water activity suppressor. The papaya fruits structured with alginate presented greater firmness (above 3 kg). The pineapple gel with alginate could not be cut with a knife and although the mango gel could be cut, it adhered to the knife.

O objetivo deste trabalho foi investigar os parâmetros tecnológicos relevantes no processo de estruturação de polpa concentrada de mamão (16ºBrix), utilizando um delineamento experimental associado a Metodologia de Superfície de Respostas. Os resultados do planejamento composto central utilizado mostraram que as variáveis pectina (x1) e alginato (x2) foram estatisticamente significativas para aumentar a firmeza de fruta estrutura de mamão. Foram realizados experimentos para confirmar as previsões do modelo matemático proposto para firmeza. As frutas estruturadas obtidas com os menores níveis de pectina (7g/kg) e alginato (7g/kg) apresentaram firmeza elevada, em torno de 3,2kg, cerca de 2,4 vezes maior que o valor previsto pelo modelo, provavelmente devido a variações no pH da polpa de mamão. Os resultados mostraram ser possível produzir fruta estruturada com teor elevado de polpa de mamão concentrada (672g/kg) e quantidade mínima de sacarose (364g/kg). O glicerol (x3) na concentração de 100g/kg suprimiu a atividade de água dos géis de polpa concentrada de mamão para 0,922. A secagem (60ºC/6h) sob vácuo (0,8kgf/kg) das frutas estruturadas minimizou o problema de adesividade superficial das frutas estruturadas e, concomitantemente, promoveu redução na atividade de água, para níveis de umidade intermediária, em torno de 0,860.

The objective of this study was to investigate the relevant technological parameters of the manufacturing process of restructured fruit made from concentrated papaya pulp (16ºBrix) using an experimental delineation method associated with the Surface Response Methodology. The results of the Central Composed Design utilized show that the effect of the variables pectin (x1) and alginate (x2) on the increase in firmness of the papaya fruit restructured is statistically significant. A series of experiments was conducted to confirm the values predicted by the mathematical model proposed for firmness. The restructured fruits produced with the lowest addition levels of pectin (7g/kg) and alginate (7g/kg) exhibited high firmness values of about 3.2kg. These values were approximately 2.4 times greater than the values for firmness predicted by the model, probably due to variations in the pH of the papaya pulps used in the experiments. The results showed that it is possible to manufacture restructured fruit using high levels of concentrated papaya pulp (672g/kg) and minimum amounts of sucrose (364g/kg). Glycerol (x3) used at the concentration of 100g/kg reduced the level of water activity of the concentrated papaya pulp gels to 0.922. Vacuum drying (60ºC/6h; 0.8kgf/kg) of the restructured fruits minimized the problem of surface adhesion and, at the same time, lowered water activity to intermediate levels of about 0.860.

Foi investigado o efeito da fermentação natural da mandioca, isoladamente, ou em combinação com o cozimento em água em ebulição, na crocância dos "chips". As fatias de mandioca, oriundas de raízes previamente descascadas e limpas foram imersas em água potável a 30ºC durante períodos de 8h e 24h e depois fritas. As raízes inteiras, descascadas e limpas, foram mantidas nas mesmas condições, porém por períodos mais longos: 24h, 30h e 48h, após os quais as raízes foram fatiadas e fritas. A fermentação natural foi conduzida sem a adição de qualquer agente fermentativo, imergindo uma parte de fatias ou de raízes de mandioca em quatro partes de água potável a 30ºC, em estufa com controle de temperatura. Outras variáveis estudadas foram: variedades de mandioca e o formato das fatias. O efeito dos tratamentos foi avaliado com base na fraturabilidade dos "chips", medidos em Analisador de Textura TA.XT2. O formato das fatias pareceu ser um fator importante, pois afetou as características de textura dos "chips", além dos tratamentos propriamente ditos. O formato retangular das fatias, apesar do aspecto atrativo, foi considerado inadequado para a fabricação dos "chips", sendo sugerido o formato redondo. Foi verificado que a fermentação natural das raízes inteiras ou cortadas em fatias, isoladamente ou em combinação com o cozimento em água em ebulição, foi considerada uma técnica inadequada para tornar os "chips" de mandioca mais crocantes, visto que promoveram, na maioria dos casos, aumento na dureza comparado aos "chips" obtidos do controle. Estas observações foram válidas para todas as variedades estudadas: IAC Mantiqueira, IAC 576.70, IAC 13 e IAC 14.

It was investigated the effect of natural fermentation of cassava, alone or combined with cooking in boiling water on the crispness of cassava chips. The thin slices of cassava, originally from previously peeled and cleaned roots were submerged in drinkable water at 30ºC during periods of 8h and 24h. The whole cassava roots, also peeled and cleaned were submitted on the same conditions, but for longer periods: 24h, 30h and 48h, after those roots were sliced and fried. The natural fermentation was conducted without any fermentative agent, only submerging one part of thin slices or whole roots into four parts of drinkable water at 30ºC in a controlled temperature incubator. The other variables studied were: cassava variety and slice format. The effect of the treatments was evaluated, based on the friability of the chips as measured by the Texture Analyzer TA.XT2. The format of the slices appeared to be an important factor, because it affected texture characteristics of the chips, as well as the actual treatments. The rectangular format, although attractive, was considered inadequate for the manufacture of chips, the round format being suggested as more suitable. It was shown that the natural fermentation of the whole roots or cut into thin slices, alone or combined with boiling was considered an inadequate technique to obtain crispness cassava chips, since in general, such treatments increased the hardness of the chips, as compared to the untreated samples. This observations were valuable from all the studied varieties: IAC Mantiqueira, IAC 576.70, IAC 13 and IAC 14.

Pré-tratamentos como o cozimento, a fermentação natural e a secagem parcial foram aplicados em raízes de mandioca, visando a obtenção de "chips" comestíveis. A avaliação sensorial foi feita com base na aceitação e aparência dos "chips" das variedades IAC Mantiqueira e IAC 576.70. Trinta consumidores potenciais do produto foram selecionados em função da disponibilidade e interesse em participar dos testes. Foi utilizada escala hedônica de 7 pontos, onde os provadores avaliaram as amostras delineadas em blocos casualizados. Os resultados obtidos mostraram que os "chips" controle e pré-cozidos foram aceitos sensorialmente, apresentado médias de 5,1 (gostei ligeiramente) para IAC Mantiqueira e 6,0 (gostei moderadamente) para IAC 576.70. Os "chips" pré-fermentados de ambas variedades foram rejeitados. Os termos de agrado mais comentados pelos provadores foram "sabor de mandioca", "crocância" e "textura". Os termos de desagrado mais citados incluem "textura dura", "falta sabor de mandioca" e "gosto de óleo". Os provadores consideraram adequada a aparência dos "chips" de ambas variedades, sendo ligeiramente preferida a aparência dos "chips" da IAC 576.70, com exceção dos "chips" cozidos por 8 minutos e os fermentados, rejeitados pelos consumidores. A cor amarela da polpa pode ter influenciado a aceitação da variedade IAC 576.70. A composição centesimal e o teor de fibras na mandioca in natura e, o teor de lipídeos em "chips" de mandioca, também foram apresentados.

Pre-treatments such as cooking, natural fermentation and partial drying were applied to cassava roots, aimed at obtaining edible cassava chips. The sensory evaluation was based on the acceptance and appearance of the chips, using the varieties IAC Mantiqueira and IAC 576.70. Thirty potential consumers of the product were selected based on their availability and interest. A 7-point hedonic scale was used, all the judges evaluating all the samples using a randomised block design. The results showed sensory acceptance of both the pre-cooked and non pre-cooked (control) chips, with means of 5.1 (liked slightly) for IAC Mantiqueira and 6.0 (liked moderately) for IAC 576.70. The pre-fermented chips of both varieties were rejected. The agreeable attributes most cited by the judges were: "cassava flavour", "crispness" and "texture". The disagreeable attributes most cited were "hard texture", "lack of cassava flavour" and "oily taste". The appearance of the chips from both varieties was considered adequate, with slightly preferred to the IAC 576.70, with the exception of those cooked for 8 minutes and the fermented samples, which were rejected. The yellow colour of the IAC 576.70 cassava pulp may have influenced the acceptance of these chips. The proximate compositions and fibre contents of the in natura cassava roots and the fat contents of the chips, are also presented.

Com a finalidade de ampliar o aproveitamento da palmeira produtora do palmito estudou-se a influência da poligalacturonase e de enzimas maceradoras na textura das partes semi-rígidas do vegetal não-comestíveis, incubando-se preparados comerciais de celulase, hemicelulase e poligalacturonase com o palmito preparado na forma de pequenos toletes (1-3 cm de comprimento) e em porções de 2cm do raquis do vegetal. Embora os tratamentos com hemicelulase e mistura de hemicelulase e poligalacturonase tenham promovido ligeiro amaciamento do palmito, os resultados mostraram ,de modo geral, acréscimo na textura do palmito cortado em porções de 3,0 cm e em fatias de 1,0 cm indicando solubilização intensa das regiões suscetíveis a hidrólise com a permanência das regiões duras mais ricas em lignina. Como nos outros tecidos do palmito, no raquis fibroso, não foi comprovada estatiscamente a ação das enzimas na textura do vegetal.

With the aim of amplifying the utilization of the palm tree the influence of poligalacturonase and macerating enzymes on the texture of the hard tips of hearts of palm was studied, incubating commercial preparations of cellulase , hemicellulase and poligalacturonase with the hearts of palm, prepared as small stalks of 1-3 cm length and with 2 cm portions of the rachis of the plant. Although the treatments containing hemicellulase and a mixture of hemicellulase and poligalacturonase promoted a slight softening of the hearts of palm, the results generally showed a hardening of the texture of the hearts of palm prepared as stalks of 1 to 3 cm indicating great solubilization of the parts susceptible to hydrolysis, the hard lignin rich parts remaining intact. As in the other tissue of the plant, in the rachis of the fibrous hearts of palm, the action of the enzymes was not statiscally proven.
